Cabbage Soup
This is Joanne’s recipe for cabbage soup.  Really great for when you have a good supply of cabbage coming in from the garden.  Fall 2012.

Roasted Eggplant and Tomatoes
Here is Anita Pinkus’ recipe for Roasted Eggplant and Tomatoes.   The ingredients include some of the most commonly grown vegetables and herbs in our garden and can be served in a variety of ways.  She hopes you all like it as much as she does. May 2014.

  1. I just made cabbage soup. Most of the ingredients were local – tomates from my garden, my very own carrots, and other fresh veggies from my CSA – HoneyBrook Farms in Hopewell. Hope you like! 🙂

    Cabbage Soup

    5 chopped Carrots
    5 Celery Stalks
    1 Medium Cabbage, chopped
    3 onions, chopped
    ½ lb cut up string beans
    2 Green Peppers, chopped
    1 container organic beef broth
    2 Qt tomato juice
    32 oz. Crushed tomatoes
    1 ½ lb. browned gr. Beef, strained
    Beef bones for taste
    Salt and pepper to taste
    Garlic to taste
    Hot Mexican Chile powder
    Chop all ingredients and add to large stock pot.
    Cook for several hours until ingredients are tender and soup thickens.
